New distillery planned for Carnegie

Ryan and Sarah Kanto will open Quantum Spirits at 230 E. Main St. in Carnegie in 2018. The couple plans to begin production in the fall of 2017. Carnegie is becoming quite the spirits town.

Apis Mead & Winery opened its doors almost three years ago and is set to move to a larger space two blocks away from its current location to beef up production, while the town will see a new kid on the block — Quantum Spirits — in 2018.

Quantum Spirits is the brainchild of Ryan and Sarah Kanto. The couple plan to start production in the fall and open in February.

Both have a love of eating and drinking well and always saw themselves in some kind of business together. With the vibrancy of the craft distilling community in Pittsburgh, they knew they wanted to be a part of it.

“We fell in love with the Main Street area of Carnegie and the resurgence it's having,” Sarah Kanto said. “It's a great location for those who don't want to go through a tunnel or bridge to have to get to a great drink.”

And the community is welcoming them with open arms.

“The distillery is an excellent complement to our already vibrant downtown,” Carnegie Mayor Jack Kobistek said. “The people who already live and visit Carnegie will enjoy what Quantum has to offer and it will also bring new people into town.”

The distillery will be at 230 E. Main St., the location of a former German bakery. At first, the focus will be on distilling vodka and gin and the production line eventually will include aged gin, and when the timing is right — whiskey.

Tours will be offered and visitors can consume the product in the tasting room, The Triple Point — a term from thermodynamics and a nod to an icon of the region where the Three Rivers come together at The Point.

Ryan Kanto has been an avid home craft beer brewer for over 15 years and also has a professional background in chemical engineering.

“I've done a fair amount of distilling in my life, but not for a commercial product that someone consumes,” Ryan Kanto said.

His background in craft brewing and chemistry lends itself well to distilling, but Ryan Kanto said blending is a new area for him, which will be the fun part.

And, he has a vision to push the science of spirit making and innovate the process with the most modern technology and advanced techniques. He says it's where high art meets advanced science.

“I am happy to have Quantum as a neighbor,” said David Cerminara, founder and owner of Apis Mead & Winery. “Pittsburgh already has its share of amazing distilleries — Maggie's Farm Rum, Boyd & Blair Potato Vodka, Wigle Whiskey… and another great distillery could only strengthen us as a spirits destination.”
