The donuts at Moochi & You are made with sweet rice flour and are light and airy.

Mochi is a Japanese-style dessert made of sweet rice flour.

It is described as light and airy and will be available at the newest spot in Bellevue — Moochi & You, which is set to open on Friday.

The shop, located in the heart of the neighborhood, will feature donuts as well as Korean corn hot dogs. Also on the menu will be classic boba, also known as bubble tea, a popular Asian drink that often consists of a milky sweet tea and tapioca pearl balls.

Moochi & You will offer a variety of flavors.

Moochi & You uses Ghirardelli chocolates and top the donuts with pistachios, Oreos and other goodies. The hot dogs are all beef and they have spicy options.

Also on the menu will be coffee and different tea flavors. All of the tea is brewed fresh. The fresh milk tea is made with organic whole milk.

The cost of one donut is $3.99.

Co-owners Weixiang You of Franklin Park and JiaJia Manuel of Cranberry, both from China, said there isn’t anything else like this in the area. The shop name was inspired by You’s last name, an inspiration from the Mochi dessert. He has been in the food and restaurant industry for the past decade.

Manuel is a real estate agent who discovered the space was available. It was formerly the Valkyrie Doughnuts shop.

They refreshed it with a Tiffany blue color scheme.

“Everything here tastes really, really good,” Manuel said. “He has put so much thought into everything he has done here.”

“Our ingredients are high quality,” You said. “We want to share the love and share moochi with family and friends, Bellevue and everyone who comes in.”

People have been stopping by asking when they are opening, Manuel said.

“Bellevue is such a cute area,” Manuel said. “We think this will do well here.”

RJ Thompson, founding chair of Bellevue Forward, a non-profit that focuses on economic development and promoting Bellevue to help grow and sustain businesses, said there is a diverse mix of businesses and a wide range of cultural representation in Bellevue.

“We are thrilled to have Moochi join our vibrant and diverse business community,” Thompson said. “The businesses support each other and collaborate on different types of events. Moochi will add a great dimension to what our community has to offer and drive more people to live, work, play and thrive here.”
