Poulet Bleu to reopen in Lawrenceville

The Lawrenceville neighborhood can enjoy Poulet Bleu’s best-selling souffle once again, as the French-inspired bistro is set to reopen its doors in mid October.

The restaurant, located at 3517 Butler Street, will welcome guests for dinner service Tuesday through Saturday starting on Oct. 21.

In the kitchen will be a familiar-face. Chef Graham McCollum, who worked at Poulet Bleu prior to its temporary closure, will be responsible for the new menu, which will be back classics such as the French onion soup.

During the restaurant’s shutdown, McCollum spent time cooking in France where he got “more hungry and more passionate,” said Tolga Sevdik, co-owner of Poulet Bleu.

“(McCollum) brought a lot of energy and ideas back to us,” Sevdik said to TribLive on Tuesday,

Poulet Bleu opened in 2018 by the Richard DeShantz Restaurant Group. The building, is known for its French ambiance, has blue-and-white interiors, floral wallpaper, zinc-topped bar and copper-accented open kitchen.

Last December, after renovations and water damage repairs to the restaurant’s first and second floors, Poulet Bleu was ready to reopen, but a storm damaged the roof causing the need for a second wave of construction, Sevdik said.

The building will have the same design and layout but with updated flooring, walls, paint and an extended patio.

When Poulet Bleu first reopens only the first floor and patio will be available for dining. According to Sevdik, these areas can accommodate roughly 70 people, not including seating at the bar.

Sevdik said in the future they plan to expand Poulet Bleu’s dining experience with a specialized tasting menu served at a counter where guests can watch the kitchen in action.

Poulet Bleu opened last week for reservations and gained over 550 bookings within one day.

Sevdik said they are already booked-up through the end of the year.
