Plum resident Paytn McCune’s creativity spreads like sauce on pizza dough.
It’s one reason the Lelulo’s Pizzeria owner came up with a new take on a breakfast item to make lunch the most important meal of the day.
She debuted a waffle pizza Thursday afternoon made with fresh tomatoes, spinach and cheese sandwiched inside pizza dough pressed in a waffle maker. The dough is made from McCune’s own recipe.
The “waffle,” which is about the size of a personal pan pizza, is then baked in an oven at 600 degrees and later topped with a balsamic glaze and feta and Parmesan cheeses.
“I tend to get pretty creative with everything that I do here,” said McCune, a 2010 Plum High School graduate. “I’ve done a lot of other stuff like a pizza burger and pizza roses for Valentine’s Day. Mostly it’s because I’m super hungry and like food.”
The effort also coincides with the shop’s slogan, “Endless Pizzabilities.”
However, the idea came by happenstance.
McCune said she recently bought a waffle maker for her house. The balsamic glaze was from another specialty pizza made last month.
“I made it as a white pizza, because that’s my favorite here,” she said. “I tried it and was like, ‘I should really put this on the menu.’”
Others seemed to agree as only a couple were left out of 40 made for Thursday’s lunch rush.
“It went really well, better than I expected,” said McCune. “The other one that I decided to do, because some people don’t like spinach and tomato, (was) a traditional style one with cheese, pepperoni and garlic in the middle (and) a drizzle of our sweet sauce on top. We offer two kinds of red sauce.”
The owner said she plans on offering waffle pizzas again next Thursday and could make it a regular fixture at the shop based on demand.
