Building the Valley: Gilpin resident plans to open craft doughnut shop in Leechburg

When people hear the word “goat,” they think of the stubborn animal, or maybe the slang for “Greatest Of All Time” athletes in their respective sports.

For those strolling along Market Street in Leechburg, the word soon will make them think of a sweet circular treat.

Gilpin resident Jeremy Smail and his wife, Ashley, are planning to open Goat Donut Co., a craft doughnut shop, by mid-February.

“We thought doughnuts were a specialty that could attract people into town,” Smail said.

In 2019, the couple bought the building that housed a floral shop for decades. Renovations have begun, and the building is receiving a makeover to combine a vintage style with modern twists.

The Smails chose the location because of its walkability and proximity to other local businesses.

Doughnuts will have names with a localized connection to them: the blueberry doughnut is called a “Blue Devil,” an homage to the Leechburg School District mascot; the cinnamon sugar doughnut is named after the Kiskiminetas River. Customers will be able to customize their dozen doughnuts of choice, such as picking their toppings.

Smail said the doughnut-making process will be highly visible to customers. First, they fill out their orders on a piece of paper or an iPad. Then they can see their orders being made right in front of them. A robotic device prepares the doughnuts.

“They get to see and be a part of the experience,” Smail said.

The shop also will serve as a hangout spot, with indoor seating and Wi-Fi. The shop is accepting employment applications.

“We in Leechburg could use a new business that will create jobs for people and the kids,” Smail said.
