A well-established catering company is expanding its operations with a fresh-express foods concept in Allegheny Township.

Cooked Goose Catering, based in Oakdale, is readying its second location for its soon-to-open debut in the former Dobi Catering building, a longtime catering facility in the Alle-Kiski Valley.

Dobi Catering was quietly put on the market in 2023 and sold in 2025.

Cooked Goose employee Diana Bruno was chopping garlic Friday at the 29 Angel Drive location in Allegheny Township in anticipation of the impending opening.

“I’m ready,” she said with a smile while managing trays of homemade meatballs.

Bruno, of Plum, left her previous job at Hoffstot’s Cafe Monaco in Oakmont to join The Cooked Goose Catering team.

An opening date for Cooked Goose was not officially released, but an early March debut is in the works, according to manager Ray Novak, of Upper Burrell.

A new exterior business sign featuring a large goose on the logo was hung Thursday, and Cooked Goose announced the news on its Facebook page that same day, writing, “We’ve got big news and it’s officially written on the wall.

‘Express’ foods concept

The first phase of the opening will be The Goose Express. After that, full-service Cooked Goose Catering will be available.

The Goose Express will feature fresh, homemade takeout; grab-n-go soups; lunch and dinner meals; and casual dine-in and market food items featuring Italian pastas, olive oil, spices, sauces and more.

Novak brings decades of food and beverage management/start-up experience and said roast beef and chicken are two signature Cooked Goose items, along with pizza; hoagies; rolls and bread sticks; Asian dishes; family meals; chef’s specials; and hot sides, such as mashed potatoes, mac-n-cheese and, on Fridays, pierogis and haluski.

Cooked Goose intends to make use of the top-secret recipes used by Dobi Catering, including the custom spice dusting used on its pressure-cooked chicken.

Cooked Goose Catering’s flagship location remains open in Oakdale and is owned by Tim Burke, who declined a TribLive request for comment.

Allegheny Township Supervisor Jamie Morabito said it’s great having a similar business fill the void left by Dobi Catering, which had been in business for 63 years.

“This demonstrates that businesses are eager to be part of the thriving Allegheny Township. I’m sure all residents will greatly appreciate The Cooked Goose being open for business,” Morabito said.
