Letter to the editor: Vegan New Year's resolution benefits all

It’s that time again. Millions of people around the world will make New Year’s resolutions that they plan to keep. Some decide it’s time to lose a few pounds or maybe make the decision to unplug from social media. One of the more popular resolutions is choosing to go vegan. This was my own New Year’s resolution 12 years ago.

With so many striving to get healthy, lose weight and lower their carbon footprint, going vegan is the single easiest way to make all of this happen, and going vegan is easier now than ever.

Fast-food giants like Burger King, Subway and White Castle all offer vegan options. Earlier this year, Taco Bell introduced nacho fries with vegan cheese nationwide, and their inventory sold out within a few days.

Plant-based start-ups are constantly introducing new products. Sales of vegan food have grown 28% in the past year to $7 billion, and sales of vegan cheeses, yogurt and ice cream are exploding at a 50% rate. Plant-based milks now account for 35% of the market.

A vegan New Year’s resolution is better for your health, the planet and the animals; make a resolution that benefits all.
